The name awaibuki is formed from “awa,” meaning bubbles, and “ibuki,” referring both to the breath of yeast during fermentation and to Mt. Ibuki, the highest peak in Shiga, renowned for its heavy snowfall.
Light, refreshing, and delicately effervescent, it offers a bright sweet-and-tart flavor that is surprising for a sake born from rice.
