In pursuit of a flavor true to the brewery’s heritage, we revived the traditional kimoto method in 2018. Seeking a more natural approach to sake brewing, we work with kimoto fermentation carried out in wooden vats.
We believe that by bringing together rice and water nurtured by nature with the microorganisms residing within the wooden vats, this sake can express the character of our brewery with greater clarity and depth.
The richness distinctive to kimoto is joined by subtle woody nuances from the vats, resulting in a sake that is concentrated yet clean, with a crisp, well-defined finish.
