In an era when new values and products emerge one after another, we felt a renewed need to reexamine the significance of Japan’s long-standing traditions and techniques—and to pass them on to the next generation.
With this in mind, we resumed wooden vat brewing in 2020.
Named Kinowa (“Cycle of Wood”), this sake embodies our wish to expand a sense of connection, circulation, and continuity rooted in wood, beginning with the act of brewing itself. Gentle sweetness and refreshing acidity create a sense of ease, while subtle wooden nuances are woven into the flavor. Balanced and layered, it remains unmistakably Shichihonyari at its core.
