This sake is carefully aged at low temperatures after brewing with rice grown without the use of pesticides or synthetic fertilizers. The gentle, supple umami characteristic of such rice gains added complexity and roundness through slow maturation. By focusing on a single field, single variety, and a single brewing, we seek to express the character of Kohoku with greater clarity and depth.
