While higher polishing is often associated with a cleaner style of sake, at Shichihonyari we also pursue brewing with minimally polished rice.
By limiting the degree of polishing, this Junmai preserves more of the grain’s original character, expressing the robust, cereal-like umami inherent to rice.
Firm in structure and supported by crisp acidity, it settles naturally into the rhythm of a meal, inviting another cup without drawing attention to itself.
