Brewed with the rare sake rice Wataribune—developed in the Meiji era, lost for a time due to the difficulty of cultivation, and later revived from only a handful of surviving seeds.
To honor the inherent character of this precious rice, polishing is intentionally kept to 77%, allowing the grain’s natural strength to remain fully present.
Dry in profile yet rich in rice-derived umami, the sake finishes clean and decisively, its structure becoming most apparent through repeated sips at the table.
