Brewed with the rare sake rice Wataribune—originally developed in the Meiji era, lost for a time due to its challenging cultivation, and later revived from only a handful of surviving seeds. By keeping the aroma restrained, this Daiginjo carefully draws out the rice’s natural umami, resulting in an elegant and composed expression. Lighter in style within the Shichihonyari lineup, it gently enhances the character of the ingredients it accompanies.
